Ingredients
- 5.5 oz dark chocolate (60% – 75% cocoa), finely chopped
- 1/2 cup unsalted butter
- 1 tablespoon instant coffee powder
- 1 cup granulated sugar
- 2 large eggs, whisked
- 3/4 cup all-purpose flour
- For the frosting: 1/2 cup unsalted butter, powdered sugar, instant coffee, boiling water
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
- In a microwave-safe bowl, melt the dark chocolate and butter together in short increments until smooth.
- In another bowl, combine instant coffee powder, sugar, and vanilla extract. Stir in the melted chocolate mixture.
- Add whisked eggs one at a time, then gradually mix in flour and salt until just combined.
- Pour the batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out with moist crumbs.
- While cooling, prepare the frosting by dissolving coffee powder in boiling water and mixing it with softened butter and sifted powdered sugar.
- Once cooled, frost the brownies and cut them into squares before serving.
