Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with muffin liners.
- In one bowl, whisk together the eggs, vegetable oil, milk, orange juice, and orange zest until well combined.
- In another bowl, mix the flour, sugar, baking powder, baking soda, salt, and ground cardamom until blended.
- Gently fold the dry mixture into the wet ingredients until just combined; avoid overmixing.
- Fill each muffin cup about two-thirds full with batter and sprinkle with sparkling sugar.
- Bake for 20-22 minutes until golden brown and a toothpick inserted comes out clean.
