- 2 sheets puff pastry
- 2 cups blackberries
- ½ cup water
- 1 tablespoon lemon juice
- ¾ cup sugar
- 8 ounces goat cheese
- 2 lemons, zested
- 4 teaspoons raw sugar
- 2 teaspoons fresh thyme, minced
- 1 egg
Instructions
- Prepare the Blackberry Jam: In a saucepan, combine blackberries, water, lemon juice, and sugar. Cook over medium heat for 20-30 minutes until thickened. Smash gently and cool.
- Thaw and Roll Out Puff Pastry: Thaw pastry sheets until pliable. Roll each sheet into a rectangle on a floured surface.
- Assemble the Pastry Twists: Spread goat cheese on each rectangle, top with cooled jam, cut into strips, fold in half lengthwise, and twist gently.
- Bake: Preheat oven to 400°F (200°C). Place twists on parchment-lined baking sheet. Brush with egg wash and sprinkle with lemon-thyme sugar. Bake for 16-18 minutes until golden brown.
