Ingredients
- 2 sticks unsalted butter, softened (1 cup)
- 1/4 cup brown sugar
- 1/2 teaspoon salt
- 2 cups flour
- 12 ounces cream cheese, softened
- 1/4 cup sour cream
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup peach jam
- 3 large peaches, thinly sliced
- 1 cup flour
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon ground ginger (optional)
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 stick butter, melted (1/2 cup)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add salt and flour, mixing until well combined.
- Press this mixture evenly into the bottom of your greased 9×13-inch baking dish.
- Bake for 15 minutes or until lightly golden. Remove from oven and let cool slightly.
- In another bowl, beat together softened cream cheese, sour cream, granulated sugar, eggs, and vanilla extract until smooth.
- Pour this mixture over the cooled shortbread crust.
- Spread peach jam over the cheesecake layer evenly. Arrange thinly sliced peaches on top of the jam.
- In a separate bowl, combine flour, brown sugar, granulated sugar, ground ginger (if using), cinnamon, salt, and melted butter. Mix until crumbly.
- Sprinkle topping mixture over peaches. Bake for an additional 35-40 minutes or until set.
