Ingredients
- 10 oz challah or French bread, cut into large chunks
- 24 ounces frozen sliced peaches, thawed and drained
- 1 1/4 cups almond milk
- 5 eggs
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 2 tsp light butter
- 1/2 tsp ground cinnamon
Instructions
- Grease a 13×9 casserole dish with cooking spray and evenly layer bread chunks.
- In a medium bowl, beat together eggs and sugar until smooth; add almond milk, vanilla extract, cinnamon, and salt.
- Pour the egg mixture over the bread, pressing down to ensure coverage.
- Cover with plastic wrap and refrigerate for at least a few hours or overnight.
- Preheat the oven to 350°F (175°C). Place thawed peaches on top of the bread.
- In a small bowl, mix flour, brown sugar, light butter, and cinnamon to create streusel topping; sprinkle over peaches.
- Bake uncovered for 45–60 minutes until golden brown and set. Cool before serving.
