Instructions
- Preheat oven to 350°F (175°C) and grease a muffin pan.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, mix egg, milk, vegetable oil, and vanilla until combined.
- Stir wet ingredients into dry ingredients until just mixed; fold in 3/4 cup peaches.
- For the topping, mix remaining flour, sugar, baking powder, cinnamon, and cold butter until crumbly.
- Fill muffin cups with batter; sprinkle with topping and remaining peach pieces.
- Bake for about 20 minutes or until a toothpick comes out clean.
