- 4 pounds fresh peaches

- ½ cup sugar
- 1 teaspoon cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- ½ cup cold unsalted butter (cut into small pieces)
- 1 large egg yolk
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 3-quart ceramic baking dish.
- Wash and slice the peaches into wedges, removing the pits. In a mixing bowl, combine the sliced peaches with sugar, cornstarch, cinnamon, and lemon juice; toss gently.
- In another bowl, mix flour, oats, brown sugar, sugar, cinnamon, nutmeg, and salt. Add cold butter and blend until crumbly. Stir in the egg yolk until just combined.
- Spread the peach mixture evenly in the baking dish and sprinkle the crumble topping on top. Bake for about 35 minutes until golden brown.
