- 2 cups fresh or frozen peaches (peeled and chopped)
- 2 cups plain Greek yogurt (full-fat or low-fat)
- ¼ cup honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice (optional)
Instructions
- If using fresh peaches, peel and chop them. For frozen peaches, thaw slightly.
- In a blender or food processor, combine peaches, Greek yogurt, honey, vanilla extract, and lemon juice (if using). Blend until smooth and creamy.
- Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup.
- Pour into an ice cream maker and churn according to instructions (20–25 minutes). If you don’t have an ice cream maker, pour into a shallow freezer-safe container. Freeze for 1–2 hours, then stir well every 30–60 minutes until soft-serve consistency is achieved (about 3–4 hours).
- Serve immediately for soft-serve texture or freeze longer for firmer scoops.
