- 1 cup almond flour
- 1 ½ cups powdered sugar
- 3 large egg whites (room temperature)
- ¼ cup granulated sugar
- 1 cup fresh peaches (pureed)
- 1 cup heavy cream
- 1 tsp vanilla extract
- Additional powdered sugar for filling
Instructions
- Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
- Sift together almond flour and powdered sugar twice into a bowl.
- In another bowl, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form.
- Gently fold the dry mixture into whipped egg whites until combined.
- Pipe small circles onto prepared baking sheets and let rest for 30 minutes until they form a skin.
- Bake the macarons for 15-18 minutes until firm but slightly soft when pressed; allow to cool completely.
- For the filling, whip heavy cream with powdered sugar and vanilla extract until fluffy, then fold in pureed peaches.
- Assemble by sandwiching the filling between two macaron shells.
