Ingredients
- 8 ounces fresh mozzarella (sliced)
- 2 peaches (cut into wedges)
- 3 heirloom tomatoes (sliced)
- Basil leaves
- 3 tablespoons fresh lemon juice
- 1 tablespoon pesto
- 1 teaspoon honey
- Kosher salt and fresh ground black pepper to taste
- Balsamic glaze for drizzling on top of the salad
Instructions
- In a small bowl, whisk together 3 tablespoons of fresh lemon juice, 1 tablespoon of pesto, 1 teaspoon of honey, and salt and pepper to taste. Set aside.
- On a large serving plate, arrange slices of heirloom tomatoes evenly. Layer with thick slices of mozzarella and wedges of peaches.
- Scatter fresh basil leaves throughout the salad.
- Drizzle the prepared vinaigrette over the salad and finish with balsamic glaze.
