  • 3 fresh peaches
  • 1 ½ cups all-purpose flour

  • 2/3 cup granulated sugar
  • ⅓ cup room temperature unsalted butter
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup buttermilk (room temperature)

Instructions

  1. Preheat your oven to 350°F (177°C) and spray a non-stick muffin pan.
  2. Wash and slice peaches into thin wedges. In each muffin cavity, place a small piece of cold butter followed by light brown sugar and arrange peach slices on top.
  3. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, cream granulated sugar and room-temperature butter until fluffy. Add the egg and vanilla extract; mix well.
  4. Gradually add dry ingredients and buttermilk to the wet mixture until just combined.
  5. Spoon batter over peach slices in muffin cavities and bake for about 30 minutes or until golden brown.
  6. Allow cooling slightly before inverting onto a serving plate.
