- 1 tablespoon cold unsalted butter
- 6 teaspoons light brown sugar
- 3 fresh peaches
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2/3 cup granulated sugar
- ⅓ cup room temperature unsalted butter
- 1 large egg (room temperature)
- 1 teaspoon pure vanilla extract
- ½ cup buttermilk (room temperature)
Instructions
- Preheat your oven to 350°F (177°C) and spray a non-stick muffin pan.
- Wash and slice peaches into thin wedges. In each muffin cavity, place a small piece of cold butter followed by light brown sugar and arrange peach slices on top.
- In a mixing bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, cream granulated sugar and room-temperature butter until fluffy. Add the egg and vanilla extract; mix well.
- Gradually add dry ingredients and buttermilk to the wet mixture until just combined.
- Spoon batter over peach slices in muffin cavities and bake for about 30 minutes or until golden brown.
- Allow cooling slightly before inverting onto a serving plate.
