- 1½ cups graham cracker crumbs

- 6 tablespoons unsalted butter, melted
- 16 oz cream cheese, room temperature
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- ½ cup sour cream, room temperature
- 1½ cups fresh peaches, peeled & sliced
- ½ cup all-purpose flour
- ½ cup granulated sugar (for topping)
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- For the crust: In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until moistened. Press into the base of the prepared pan.
- For the cheesecake filling: In a large bowl, beat cream cheese with sugar until smooth. Add eggs one at a time while mixing, then stir in vanilla extract and sour cream. Pour over the crust.
- For the peach topping: Toss sliced peaches with flour, sugar, cinnamon, and nutmeg. Evenly distribute over the cheesecake layer and dot with small pieces of cold butter.
- Bake for 45-50 minutes until set with a golden brown topping. Cool completely before cutting into bars.
