- 1 cup unsweetened soy milk
- ¾ cup sugar
- ¼ cup canola or sunflower oil
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1 pound fresh pears
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and chop the pears into small pieces; set aside.
- In a mixing bowl, combine the soy milk, sugar, vegetable oil, and optional vanilla extract. Whisk until blended.
- In another bowl, mix the flour, baking powder, cinnamon, and sugar.
- Gradually add the dry ingredients to the wet mixture; stir until just combined. Gently fold in chopped pears.
- Pour batter into a greased 9×13 inch baking pan and bake for about 50 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes before slicing and serving.
