- 4 haddock fillets (approximately 6 ounces each)
- 1 cup panko breadcrumbs
- 2 tablespoons lemon juice (freshly squeezed)
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Lightly spray a baking dish with nonstick cooking spray.
- Drizzle the haddock fillets with lemon juice and season both sides generously with salt and pepper.
- In another bowl, combine panko breadcrumbs, garlic powder, oregano, and a pinch of salt. Drizzle in olive oil and mix until the crumbs are coated.
- Press each fillet into the breadcrumb mixture until fully coated, then place them in the prepared baking dish.
- Bake for 15-20 minutes or until the fish flakes easily with a fork and turns golden brown.
- Serve on plates garnished with fresh herbs or lemon wedges as desired.
