Ingredients
- 1/2 cup white chocolate chips
- 1/4 cup pistachio paste (unsweetened or lightly sweetened)
- 1 tablespoon heavy cream
- 1/2 cup unsalted butter
- 4 ounces dark chocolate (60–70%), chopped
- 2 large eggs
- 2 large egg yolks
- 1/3 cup granulated sugar
- 1/8 teaspoon salt
- 2 tablespoons all-purpose flour
Instructions
- Melt the white chocolate and heavy cream together in a bowl until smooth. Stir in the pistachio paste and pinch of salt. Freeze in silicone molds for at least 1 hour.
- Preheat your oven to 425°F (220°C) and prepare six ramekins by greasing them with butter and dusting with cocoa powder.
- Melt the butter and dark chocolate together until smooth. In another bowl, whisk eggs, yolks, sugar, and salt until thick. Slowly mix in the chocolate mixture and fold in flour gently.
- Spoon batter into ramekins, insert frozen pistachio discs, and cover with more batter until three-quarters full.
- Bake for 11–13 minutes until edges are firm but centers jiggle slightly. Let cool briefly before inverting onto plates.
