Ingredients
- 8 tbsp pistachio cream (plus extra for topping)
- 113 g unsalted butter
- 100 g light brown sugar
- 50 g granulated sugar
- 1 large egg
- ½ tsp vanilla extract
- 160 g all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 100 g chocolate chips
- 45 g crushed pistachios
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together butter, light brown sugar, and granulated sugar until fluffy. Add in egg and vanilla; mix well.
- In another bowl, whisk flour, baking powder, baking soda, and salt together. Gradually fold into the wet mixture.
- Gently fold in chocolate chips and crushed pistachios.
- Drop dough onto prepared sheet about 2 inches apart; press down slightly. Top with extra pistachio cream.
- Bake for about 12 minutes until edges are golden. Let cool before transferring to wire racks.
