Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
- In a large mixing bowl, whisk together sweetened condensed milk, eggs, and vanilla extract until fully combined.
- Add baking powder and flour to the mixture, stirring until smooth without dry streaks. Gently fold in coconut flakes using a rubber spatula.
- Fill each muffin cup about ¾ full with the batter.
- Bake for 15-20 minutes until tops are golden brown.
- Allow cooling for about 5 minutes before transferring to a wire rack.
