- 1 1/2 teaspoons pumpkin pie spice
- 1/2 cup graham cracker crumbs
- 1/3 cup white chocolate chips
- Orange food coloring, as needed (optional)
- Granulated sugar, as needed, for rolling
- Chocolate chips, for topping
Instructions
- In a skillet over medium heat, melt the butter and mix with cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice until thickened.
- Stir in the graham cracker crumbs and white chocolate chips until smooth; add food coloring if desired.
- Pour the mixture onto a greased baking sheet; spread evenly and chill for 2 hours or until firm.
- Roll the chilled mixture into small balls using buttered hands.
- Coat each truffle in granulated sugar before decorating with chocolate chips.
