  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (100 g) packed light brown sugar
  • 1 1/4 cups (305 g) canned pumpkin puree
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 8 ounces (1 brick or 226 g ) block-style cream cheese (softened but still cool)
  • ¼ cup (56 g) unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups (210 g) confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350° F. Line a baking sheet with parchment paper and set it aside.
  2. In a mixing bowl, whisk together the following dry ingredients: all-purpose flour, baking powder, baking soda, salt, pumpkin pie spice. Set this mixture aside for later use.
  3. In the bowl of a stand mixer or using a hand mixer, beat together unsalted butter, granulated sugar, and light brown sugar on medium-high speed until the mixture is light and fluffy, about 3 minutes. Next, add canned pumpkin puree, large egg, and pure vanilla extract. Mix until everything is combined. Scrape down the sides of the bowl as needed.
  4. Add the reserved flour mixture to the wet ingredients. Mix just until combined; be careful not to overmix. The dough will be slightly sticky.
  5. Use a medium cookie scoop or spoon to drop heaping tablespoons of dough onto the prepared baking sheet. Space each cookie about 2 inches apart.
  6. Bake in your preheated oven for 13 to 15 minutes or until the edges are set but the centers remain soft. Allow them to cool on the pan for a few minutes before transferring them to a wire rack to cool completely.
  7. For the frosting, beat together cream cheese and unsalted butter on medium-high speed until smooth; add pure vanilla extract and sifted confectioners’ sugar. Mix again until everything is just combined—about another 30 seconds will do!
  8. Once cooled, use an off-set spatula or knife to spread frosting over each cookie. Garnish with a sprinkle of cinnamon if desired before serving.
