- 2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1 cup unsalted butter, melted
- 2 cups pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined.
- Press two-thirds of the mixture into the prepared dish as the base layer.
- In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
- Pour the filling over the base layer and spread evenly.
- Sprinkle remaining crumble on top and add chopped walnuts if desired.
- Bake for 40–45 minutes until golden brown and set. Cool completely before slicing.
