- 1 1/4 cups all-purpose flour
- 1/4 tsp salt
- 1/4 tsp granulated sugar
- 1/2 cup cold unsalted butter
- 4–6 tbsp cold water
- 15 oz pumpkin puree
- 14 oz sweetened condensed milk
- 2 large eggs
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp nutmeg
- pinch of all-spice
- pinch of ground cloves
Instructions
- To make the crust, mix flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Gradually add cold water until dough forms a disc. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Preheat your oven to 425°F (220°C).
- Roll out the chilled dough on a floured surface into a circle about 12 inches wide, then transfer it to a pie dish.
- For the filling, whisk together pumpkin puree, sweetened condensed milk, eggs, salt, and spices until smooth. Pour into the prepared crust.
- Bake for 15 minutes at 425°F (220°C), then reduce temperature to 350°F (175°C) and bake for an additional 35 minutes until set.
- Cool on a wire rack before serving.
