Ingredients
- 1 cup strong brewed coffee (cooled)
- 24 ladyfingers
- 1 cup mascarpone cheese
- ½ cup unsweetened coconut cream
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup toasted coconut flakes (for garnish)
- 2 tbsp cocoa powder (for dusting)
Instructions
- Brew strong coffee and let it cool slightly. Dissolve sugar while the coffee is still warm.
- In a mixing bowl, blend mascarpone cheese, coconut cream, sugar, and vanilla extract until smooth.
- Quickly dip each ladyfinger into the cooled coffee mixture.
- In a serving dish, layer soaked ladyfingers followed by the mascarpone mixture. Repeat layers until all ingredients are used.
- Dust the top with cocoa powder and sprinkle with toasted coconut flakes. Refrigerate overnight for best results.
