- 4 medium fresh carrots, grated
- 1 cup golden raisins
- 1 cup canned pineapple chunks (drained)

- 1 tbsp honey

Instructions
- In a large mixing bowl, grate the fresh carrots.
- Add the golden raisins and drained pineapple chunks to the grated carrots.
- In a separate bowl, whisk together Greek yogurt, honey, and lemon juice until smooth.
- Pour the dressing over the carrot mixture and gently fold until evenly coated.
- Cover and chill in the refrigerator for at least one hour before serving.
- Give it a gentle stir before transferring to serving bowls.
