Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray. Season chicken breasts with salt and pepper.
- Clean and halve the baby potatoes to ensure even cooking.
- In a bowl, whisk together olive oil, minced garlic, oregano, lemon juice, and chicken broth.
- Arrange the seasoned chicken and halved potatoes in the baking dish, pouring the sauce over them.
- Bake for about 45 minutes or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are tender.
- Serve hot, drizzling extra sauce over each serving for added flavor.
