- 3 lbs beef chuck roast
- 4 cloves fresh garlic, minced
- 4 cups low-sodium beef broth
- 2 medium yellow onions, sliced
- 2 tsp Italian seasoning
- 1/4 cup low-sodium soy sauce
- Hoagie rolls or baguettes (for serving)
Instructions
- Slice onions thinly and sear the beef chuck roast in a skillet over medium-high heat until golden brown on both sides (about 3 minutes each).
- Place the browned beef in the slow cooker and layer sliced onions on top. Pour in beef broth, add minced garlic, and sprinkle Italian seasoning.
- Cover and cook on low for approximately 8 hours or on high for 4 hours.
- Once tender, shred the beef using two forks and return it to the broth.
- Assemble sandwiches by piling shredded beef onto hoagie rolls or baguettes and serve with small bowls of broth for dipping.
