Ingredients
- 3 pounds small red potatoes or fingerlings
- 3/4 cup sour cream or Greek yogurt
- 3 tablespoons white vinegar
- 1 teaspoon sugar
- 1/2 cup fresh dill, chopped
- 1/4 cup fresh chives or green onions, chopped
- 2 tablespoons fresh parsley, chopped
- Salt and white pepper to taste
Instructions
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain.
- While potatoes are cooking, whisk together sour cream, vinegar, sugar, salt, and pepper in a large bowl.
- Add hot drained potatoes to the dressing and mix well.
- Fold in chopped dill, chives, parsley, and optional red onion.
- Chill in the refrigerator for at least one hour before serving.
