- 8 ounces uncooked pasta (such as fettuccine)
- 1.5 pounds diced zucchini
- 1 tablespoon olive oil
- 2 tablespoons butter (divided)
- ½ small onion, chopped
- 2 cloves garlic, minced
- Dash of Italian seasoning
- ½ cup chicken or vegetable broth
- 1 teaspoon lemon juice
- ½ cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Boil salted water in a pot and cook the pasta according to package directions until al dente.
- While the pasta cooks, heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Add chopped onion and sauté for about 5 minutes until softened.
- Stir in diced zucchini, minced garlic, and Italian seasoning; cook for another 5 minutes until zucchini is tender.
- Add remaining butter, chicken or vegetable broth, and lemon juice; simmer for 1-2 minutes.
- Mix in freshly grated Parmesan cheese, then combine with drained pasta, adding reserved pasta water as needed for creaminess. Season with salt and pepper before serving.
