- handful of fresh mint leaves, chopped
- 1 fresh lime (zest and juice)
- sea salt flakes and black pepper to taste
Instructions
- Cube the watermelon into bite-sized pieces.
- Chop the cucumber into similar-sized chunks.
- Cube the feta cheese.
- In a large serving bowl, combine the cubed watermelon, chopped cucumber, and feta cheese.
- Add in chopped mint leaves for freshness.
- Zest and juice one lime over the mixture.
- Season with sea salt flakes and black pepper to taste.
- Gently toss all ingredients together without mashing them.
- Taste and adjust seasoning if necessary.
- Serve chilled or at room temperature.
