Instructions
- In a large bowl, whisk together olive oil, lime juice, cumin, chili powder, salt, and pepper.
- Slice chicken into thin strips and marinate in the mixture for at least 30 minutes.
- While the chicken marinates, slice bell peppers and onion.
- Heat a skillet over medium-high heat; add marinated chicken strips and cook until golden brown (5-7 minutes).
- Add bell peppers and onion; cook until veggies are tender yet crisp (about 3-4 minutes).
- Serve warm with tortillas and desired toppings.
