Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 oz taco seasoning mix
- 14.5 oz diced tomatoes with green chilies
- 15 oz black beans, drained and rinsed
- 15 oz corn, drained
- 1 cup salsa
- 1 cup shredded Mexican cheese blend
- 6 small flour or corn tortillas, cut into strips
Instructions
- In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
- Add diced onion to the skillet and cook until softened (about 3–4 minutes). Stir in minced garlic and sauté for another minute.
- Mix in taco seasoning and cook for one minute before adding diced tomatoes (with juice). Remove from heat.
- Spray the slow cooker with non-stick cooking spray. Layer the bottom with salsa followed by tortilla strips. Add half of the beef mixture, black beans, corn, and another layer of tortilla strips. Repeat with remaining ingredients and top with salsa.
- Cover and cook on low for 4–5 hours or high for 2–3 hours.
- About 15 minutes before serving, sprinkle cheese on top to melt.
- Garnish with fresh cilantro before serving.
