Ingredients
- 2 lbs beef chuck or stew meat
- 1 large onion
- 4 cloves garlic
- 1 tbsp fresh ginger
- 2 tsp curry powder (or your favorite curry blend)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 can (13.5 oz) coconut milk
- Salt and pepper to taste
- 1 tbsp vegetable oil
Instructions
- Gather and chop the onion, mince the garlic, and grate the ginger.
- In a large pot or Dutch oven, heat vegetable oil over medium heat. Sauté chopped onion until translucent; add garlic and ginger for another minute.
- Add beef pieces to the pot, season with salt and pepper, and brown on all sides.
- Stir in spices: curry powder, ground cumin, ground coriander, turmeric; mix well.
- Pour in coconut milk; cover and let simmer on low heat for 1.5 to 2 hours until beef is tender.
