Ingredients
- 4 ounces macaroni
- 1/4 cup mayonnaise
- 1 tablespoon white vinegar
- 1 to 2 teaspoons granulated sugar
- 1 heaping teaspoon Dijon mustard
- 1 small green onion (diced)
- 1/2 cup finely diced bell pepper (any color)
- 1/4 cup finely diced celery
- 1/4 cup finely grated carrot
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- Pinch of cayenne
Instructions
- Cook macaroni in salted boiling water until al dente; drain and cool.
- In a bowl, whisk together mayonnaise, vinegar, sugar, mustard, salt, pepper, and cayenne.
- Toss diced vegetables in the dressing until well coated.
- Combine cooled macaroni with the vegetable mixture and stir gently.
- Cover and refrigerate for at least 30 minutes before serving.
