- 8–10 Frozen Soup Dumplings
- 1 tbsp neutral oil
- 1 tbsp Thai red curry paste
- 1 cup chicken stock or vegetable stock
- 1/3 cup coconut milk
- 1 tsp soy sauce
- 1 tsp sugar
- 2 kaffir lime leaves
- Fresh Thai basil leaves
Instructions
- Heat oil in a large pot over medium-high heat.
- Sauté Thai red curry paste for 1-2 minutes until fragrant.
- Stir in chicken stock (or vegetable stock) until the paste dissolves.
- Add coconut milk, soy sauce, sugar, and kaffir lime leaves; bring to a simmer.
- Gently add frozen soup dumplings; cover and cook for about 12 minutes until dumplings are cooked through.
- Stir in fresh Thai basil leaves before serving hot.
