- 3 cans peaches in lite syrup (29 ounces each)
- ½ cup salted butter
- 1 cup granulated sugar
- ½ teaspoon ground cinnamon
- 1 teaspoon nutmeg
- 1 tablespoon pure vanilla extract
- 3 teaspoons all-purpose flour
- 2 ½ cups all-purpose flour (for crust)
- 1 cup very cold unsalted butter (for crust)
- ½ – ⅔ cup very cold water (for crust)
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine canned peaches with syrup, melted salted butter, granulated sugar, ground cinnamon, nutmeg, vanilla extract, and flour until well mixed; set aside.
- For the pie crust: Mix flour, sugar, and salt in another bowl. Cut in cold butter until crumbly. Gradually add cold water until dough forms; chill for at least 30 minutes.
- Roll out half the dough and place it in a baking dish. Pour peach filling over it.
- Roll out the second half of the dough and cover the filling; cut slits for steam.
- Brush with egg wash and bake for about 45 minutes or until golden brown.
