  • 1 cup granulated sugar
  • ½ teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon pure vanilla extract
  • 3 teaspoons all-purpose flour
  • 2 ½ cups all-purpose flour (for crust)
  • 1 cup very cold unsalted butter (for crust)
  • ½ cup very cold water (for crust)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine canned peaches with syrup, melted salted butter, granulated sugar, ground cinnamon, nutmeg, vanilla extract, and flour until well mixed; set aside.
  3. For the pie crust: Mix flour, sugar, and salt in another bowl. Cut in cold butter until crumbly. Gradually add cold water until dough forms; chill for at least 30 minutes.
  4. Roll out half the dough and place it in a baking dish. Pour peach filling over it.
  5. Roll out the second half of the dough and cover the filling; cut slits for steam.
