  • 2 ½ cups all-purpose flour (for the pie crust)

  • 1 cup very cold unsalted butter (cut in cubes, for the pie crust)
  • ½ cup very cold water (for the pie crust)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine drained peaches, melted butter, sugar, cinnamon, nutmeg, vanilla extract, and flour.
  3. For the crust: Mix flour, sugar, and salt; cut in cold butter until crumbly. Gradually add water until dough forms.
  4. Roll out half of the dough and line a greased baking dish. Pour peach filling over it.
  5. Roll out the second half to cover the filling; crimp edges to seal.
  6. Brush with egg wash and sprinkle with cinnamon. Bake for about 45 minutes until golden brown.
