Ingredients
- 3 cans peaches in lite syrup (29 ounces each)
- ½ cup salted butter
- 1 cup granulated sugar
- ½ teaspoon ground cinnamon
- 1 teaspoon nutmeg
- 1 tablespoon pure vanilla extract
- 3 teaspoons all-purpose flour
- 2 ½ cups all-purpose flour (for the pie crust)
- 2 teaspoons granulated sugar (for the pie crust)
- 1 teaspoon salt (for the pie crust)
- 1 cup very cold unsalted butter (cut in cubes, for the pie crust)
- ½–⅔ cup very cold water (for the pie crust)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine drained peaches, melted butter, sugar, cinnamon, nutmeg, vanilla extract, and flour.
- For the crust: Mix flour, sugar, and salt; cut in cold butter until crumbly. Gradually add water until dough forms.
- Roll out half of the dough and line a greased baking dish. Pour peach filling over it.
- Roll out the second half to cover the filling; crimp edges to seal.
- Brush with egg wash and sprinkle with cinnamon. Bake for about 45 minutes until golden brown.
