- 2 eggs
- 3/4 cup brown sugar
- 1/2 cup canola oil
- 1/4 cup honey
- 1 1/2 cups grated carrot
- 1 cup grated zucchini
- 1/2 cup walnuts, chopped
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon baking soda
- 1 8 oz package reduced-fat cream cheese
- 1 cup icing sugar
- 1 1/2 teaspoons lemon zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, whisk together eggs, brown sugar, canola oil, honey, and vanilla extract until blended.
- Fold in grated carrots, grated zucchini, and chopped walnuts.
- In another bowl, mix flour, baking powder, ground ginger, and baking soda. Gradually add to the wet mixture until just combined.
- Pour batter into a greased 9×9 inch baking dish and bake for about 25 minutes or until a toothpick comes out clean.
- For the frosting, beat cream cheese and icing sugar until smooth; then fold in lemon zest.
- Once cooled, frost the bars and enjoy.
