- 1.5 lbs boneless, skinless chicken breasts
- 1 lb penne pasta
- 4 cups chicken broth
- 16 oz Velveeta cheese
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 cloves garlic
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/4 tsp salt
- Optional: Pinch of red pepper flakes
Instructions
- Cook penne pasta in chicken broth according to package directions, then drain (reserve some broth).
- In a large skillet, heat olive oil and butter. Add cubed chicken, garlic, Cajun seasoning, salt, and pepper; cook until golden brown (6-8 mins).
- Lower heat and mix in the cooked pasta along with Velveeta cheese, heavy cream, cheddar cheese, and reserved broth until the sauce is smooth.
- Taste and adjust seasoning as desired; serve hot.
