- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 3 tbsp extra virgin olive oil
- Juice of 1 lemon
- 2 tsp paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups cucumber, diced (about 2 medium cucumbers)
- 1 cup Greek yogurt
- 2 tbsp fresh dill, chopped
Instructions
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, paprika, cumin, oregano, salt, and pepper.
- Coat the chicken breasts in the marinade. Cover and refrigerate for at least 1 hour.
- Preheat your grill or grill pan over medium-high heat.
- Grill the marinated chicken for about 6 minutes on each side until cooked through (internal temperature of 165°F).
- Meanwhile, prepare the salad by mixing diced cucumbers with Greek yogurt, dill, salt, and pepper in a bowl.
- Serve the grilled chicken alongside the creamy cucumber salad.
