- 4 chicken breasts
- 4 ounces cream cheese (softened)
- ¼ cup grated Parmesan cheese
- 1 ½ cups chopped fresh spinach
- 1 tablespoon olive oil
- 1 teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 teaspoon salt (divided)
- 2 tablespoons mayonnaise
- ½ teaspoon red pepper flakes
Instructions
- Preheat your oven to 375°F (190°C).
- On a cutting board, drizzle olive oil over the chicken breasts and season both sides with paprika, garlic powder, onion powder, and salt.
- Carefully cut a pocket into each chicken breast using a sharp knife.
- In a mixing bowl, combine cream cheese, Parmesan cheese, mayonnaise, chopped spinach, minced garlic, red pepper flakes, and remaining salt until well-blended.
- Stuff each chicken pocket with the spinach mixture.
- Place the stuffed chicken breasts in a greased baking dish and bake uncovered for 25-30 minutes or until cooked through.
