Ingredients
- 1 (5-ounce) package mixed greens
- 2 cups sliced strawberries
- 1/2 red onion (thinly sliced)
- 1/4 cup dried cranberries
- 1/2 cup feta cheese (crumbled)
- 1/2 cup glazed pecans
- 2 grilled chicken breasts (sliced)
- 1/4 cup apple cider vinegar
- 2 tablespoons honey
- 2 tablespoons white sugar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 3/4 cup olive oil or vegetable oil
- 1 1/2 cups pecan halves
- 1/4 cup white sugar
- 2 tablespoons water
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Instructions
- Prepare the dressing by whisking together apple cider vinegar, honey, sugar, Dijon mustard, salt, pepper, and olive oil until smooth.
- For the glazed pecans, preheat the oven to 350°F. In a saucepan, combine water, sugar, salt, black pepper, and cayenne. Add pecans and coat well before baking on a greased sheet for 12-14 minutes until golden.
- In a large bowl, combine mixed greens, strawberries, red onion, dried cranberries, feta cheese, sliced grilled chicken, and glazed pecans. Drizzle with dressing just before serving.
