  • 2 eggs
  • 1 medium onion, diced
  • 2 celery stalks, sliced
  • ½ cup ketchup
  • ½ cup cheddar cheese, shredded
  • ¼ cup parmesan cheese
  • ¼ cup almond flour
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • 6 bell peppers

Instructions

  1. Preheat your oven to 400°F.
  2. In a large mixing bowl, combine ground beef, eggs, ketchup, onion, celery, cheddar cheese, parmesan cheese, almond flour, garlic, olive oil, oregano, chili powder, salt, and pepper.
  3. Wash bell peppers and remove tops and seeds.
  4. Fill each pepper evenly with the beef mixture and top with additional cheese.
  5. Place filled peppers on a baking sheet and bake for about 45 minutes until the internal temperature reaches 160°F.
  6. Let cool slightly before serving warm.
