- 2 tbsp unsalted butter (melted)
- 0.5 cup all-purpose flour
- 0.5 cup granulated sugar
- 0.25 cup unsalted butter (cold and cut into small pieces)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in one egg and vanilla extract; mix until well combined.
- Gradually add flour and baking powder, mixing until just combined. Press half of this dough into the bottom of the prepared pan.
- In another bowl, whisk together lemon juice, granulated sugar, flour, salt, eggs, and melted butter until smooth. Pour this filling over the cookie crust.
- Make the crumble topping by combining flour, sugar, and cold butter pieces until crumbly; sprinkle over the filling.
- Bake for 40–45 minutes or until golden brown on top and the filling is set. Cool completely before cutting into squares.
