  • 0.25 cup all-purpose flour
  • 0.25 tsp salt
  • 3 large eggs
  • 2 tbsp unsalted butter (melted)
  • 0.5 cup all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter (cold and cut into small pieces)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in one egg and vanilla extract; mix until well combined.
  3. Gradually add flour and baking powder, mixing until just combined. Press half of this dough into the bottom of the prepared pan.
  4. In another bowl, whisk together lemon juice, granulated sugar, flour, salt, eggs, and melted butter until smooth. Pour this filling over the cookie crust.
  5. Make the crumble topping by combining flour, sugar, and cold butter pieces until crumbly; sprinkle over the filling.
  6. Bake for 40–45 minutes or until golden brown on top and the filling is set. Cool completely before cutting into squares.
