Ingredients
- 1/2 small seedless watermelon (approximately 6 cups)
- 200 g (3/4 cup) feta cheese
- Arugula
- 1/2 cup sliced pickled red onions
- 1–2 tbsp chopped mint leaves
- Sea salt and ground black pepper to taste
Instructions
- Prepare the watermelon by cutting it into bite-sized chunks, removing the rind.
- On a large serving platter, layer the arugula followed by the watermelon pieces and feta cheese.
- Top with sliced pickled red onions and chopped mint leaves. Season with sea salt and ground black pepper to taste.
- Chill before serving for maximum refreshment.
