- 3 medium sweet potatoes, peeled and diced
- 1 pound green beans, trimmed
- 3 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine diced sweet potatoes and green beans.
- Drizzle olive oil over the veggies and add garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
- Spread the mixture evenly on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through until sweet potatoes are golden and soft.
- Remove from oven, drizzle with lemon juice before serving.
