  • 2 cups water (480 ml)
  • 1 tomato (chopped)
  • 1 onion (chopped)
  • 1 cucumber (chopped)
  • 1 handful parsley (chopped, approx. 55 g)
  • 1 handful mint (chopped, approx. 20 g)
  • 4 tbsp olive oil (60 ml)
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • Pinch black pepper

Instructions

  1. Cook the bulgur according to package instructions using water. Once cooked, transfer to a bowl to cool.
  2. While the bulgur cools, chop the tomato, onion, cucumber, parsley, and mint into small pieces.
  3. In a mixing bowl, combine olive oil, lemon juice, salt, and black pepper; whisk until well blended.
  4. In a large bowl, add the chopped vegetables and herbs along with the cooled bulgur. Pour the dressing over the mixture and toss well to combine.
