Ingredients
- 1 cup bulgur (180 g)
- 2 cups water (480 ml)
- 1 tomato (chopped)
- 1 onion (chopped)
- 1 cucumber (chopped)
- 1 handful parsley (chopped, approx. 55 g)
- 1 handful mint (chopped, approx. 20 g)
- 4 tbsp olive oil (60 ml)
- 1 tsp lemon juice
- 1/4 tsp salt
- Pinch black pepper
Instructions
- Cook the bulgur according to package instructions using water. Once cooked, transfer to a bowl to cool.
- While the bulgur cools, chop the tomato, onion, cucumber, parsley, and mint into small pieces.
- In a mixing bowl, combine olive oil, lemon juice, salt, and black pepper; whisk until well blended.
- In a large bowl, add the chopped vegetables and herbs along with the cooled bulgur. Pour the dressing over the mixture and toss well to combine.
