  • 1 teaspoon Cream of tartar
  • 1/2 stick Butter (unsalted, room temperature)
  • 2 tablespoons Water
  • 1 teaspoon Fresh lemon juice
  • 2 cups All-purpose Flour
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 2 teaspoons Baking powder
  • 1 stick Butter (unsalted cold)
  • 1/4 cup Boiling hot water
  • 1/2 teaspoon Salt
  • 3 tablespoons Granulated sugar (to dust top of cobbler)

Instructions

  1. Preheat your oven to 375°F.
  2. In a sprayed baking dish, combine frozen peaches with both sugars, vanilla extract, cinnamon, corn starch, butter, water, and lemon juice. Mix well and cover with foil; bake for 20 minutes.
  3. Meanwhile, in a bowl, mix flour, sugars, baking powder, salt, and cinnamon. Cut in cold butter until crumbly.
  4. Stir in boiling water until just combined.
  5. After baking the peaches, dollop the cobbler dough over them and sprinkle with extra sugar and cinnamon. Bake uncovered for another 30–45 minutes until golden brown.
