- 6 cups chopped romaine lettuce
- 2 small boneless skinless chicken breasts
- 2 teaspoons olive oil
- Salt and pepper to taste
- 1 cup strawberries, sliced
- 1 gala apple, sliced
- 1/3 cup craisins (dried cranberries)
- 1/2 cup shredded mozzarella cheese
- 3 tablespoons crushed walnuts
- Creamy poppyseed dressing or raspberry vinaigrette for serving
Instructions
- Divide the chopped romaine lettuce into two medium bowls and refrigerate.
- Season the chicken breasts with olive oil, salt, and pepper. Grill over medium-high heat until thoroughly cooked (internal temperature should reach 165°F). Allow to rest for five minutes before slicing.
- While resting, slice the strawberries and apple. Distribute these slices over the chilled lettuce.
- Top each bowl with craisins, mozzarella cheese, crushed walnuts, and sliced chicken. Serve with your choice of dressing.
