  • 12 medium carrots (grated)
  • 1 medium onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 bell pepper (diced)
  • ½ cup rolled oats
  • 1 tsp dried thyme
  • ½ tsp cumin
  • Salt and pepper to taste
  • 1 tbsp agar-agar powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. Boil 1 cup of lentils in 3 cups of water for about 20-25 minutes until tender. Drain any excess water.
  3. In a skillet, sauté onions, carrots, garlic, and bell peppers in vegetable broth over medium heat until softened (about 5 minutes).
  4. In a large mixing bowl, combine cooked lentils, sautéed veggies, rolled oats, thyme, cumin, salt, pepper, and agar-agar powder. Mix until well combined.
  5. Transfer the mixture into the prepared loaf pan and press down firmly.
  6. Bake for 45-50 minutes until golden brown on top. Allow cooling for 10 minutes before slicing.
