- 1 cup green or brown lentils (dried)
- 1–2 medium carrots (grated)
- 1 medium onion (finely chopped)
- 3 garlic cloves (minced)
- 1 bell pepper (diced)
- ½ cup rolled oats
- 1 tsp dried thyme
- ½ tsp cumin
- Salt and pepper to taste
- 1 tbsp agar-agar powder
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- Boil 1 cup of lentils in 3 cups of water for about 20-25 minutes until tender. Drain any excess water.
- In a skillet, sauté onions, carrots, garlic, and bell peppers in vegetable broth over medium heat until softened (about 5 minutes).
- In a large mixing bowl, combine cooked lentils, sautéed veggies, rolled oats, thyme, cumin, salt, pepper, and agar-agar powder. Mix until well combined.
- Transfer the mixture into the prepared loaf pan and press down firmly.
- Bake for 45-50 minutes until golden brown on top. Allow cooling for 10 minutes before slicing.
