Ingredients
- 2 medium sweet potatoes
- 1 teaspoon olive oil
- 1 1/4 teaspoons ground cumin (divided)
- 3/4 pound lean ground turkey
- 4 garlic cloves (minced)
- 1 teaspoon chili powder
- 1 1/4 cup canned crushed tomatoes
- 1/4 cup grated pepper Jack cheese
- Fresh parsley for garnish
Instructions
- Pierce sweet potatoes with a fork and microwave on HIGH for 8-10 minutes until tender. Let cool.
- Cut cooled sweet potatoes in half lengthwise and scoop out flesh into a bowl, mashing it with olive oil, half of the cumin, salt, and pepper.
- In a skillet over medium heat, cook ground turkey until browned; stir in garlic, remaining spices, and crushed tomatoes until heated.
- Fill potato skins with the turkey mixture, top with cheese, and broil for about 30 seconds until melted. Garnish with parsley before serving.
