Instructions
- Preheat oven to 375°F (190°C) and line a muffin pan with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, mix egg, milk, melted butter, and vanilla until combined.
- Pour wet ingredients into dry ingredients; stir until just moistened. Gently fold in chopped apples.
- For the streusel topping: combine flour, brown sugar, and cinnamon; cut in cold butter until crumbs form.
- Divide muffin batter among prepared cups and top with streusel.
- Bake for 18-22 minutes or until a skewer comes out clean.
